Healthy Lentil Salad

Looking for the perfect healthy side? This Gluten Free Vegan Lentil Salad is easy filling and perfect for lunch or dinner.

I love lentils! It’s one of my favorite peas and it’s so full of good protein that I enjoy them at least once a week. Typically they are eaten hot in dishes such as soups, stews and even burgers, but this cold salad version has become one of my new favorite ways to enjoy them.

Healthy Lentil Salad

For the dressing

  • 2 tablespoons lime juice, fresh
  • 2 teaspoons brown mustard or dijon mustard
  • 1/2 teaspoon dried oregano
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon agave
  • Salt and pepper to taste

For the Salad

  • 1 (15 oz) can lentils, drained and rinsed or 1 cup cooked and cooled
  • 1/2 cup red bell pepper diced
  • 1/2 cup green bell pepper diced
  • 1/4 cup red onion diced
  • 2 roma tomatoes diced
  • 2 tablespoons shadow beni, finely chopped or 1/4 cup cilantro chopped
  • Salt and pepper to taste

Instructions

  1. In a measuring cup or bowl, add all the ingredients for the dressing. 
  2. Whisk together until creamy and well combined. Season with salt and pepper to taste then set aside. 
  3. In a large bowl combine all the ingredients for the salad. 
  4. Toss to mix well, then add the dressing and mix again until the dressing is well mixed with the lentils and veggies.
  5. Season with salt and pepper to taste then chill for at least one hour before serving.
